This recipe brings back fond childhood memories. My mother used to make this on weekend mornings and we went at it like ravenous animals – probably because of the sugar involved. It’s not the healthiest breakfast in the world, but if someone shows up around breakfast time and the cupboard is bare, you can turn out a creditable nosh with just some bread, sugar, butter, and cinnamon.
I like using brown bread for this, but any bread will do (brioche bread is especially good). It just takes a spread of butter and some drizzled sugar and cinnamon on bread, slipped into a hot oven for a few minutes. Served with a strong cup of coffee or tea, you’ve got a crunchy breakfast treat. Assume 2-3 slices per person, because it’s a little addictive. (Also really good if you’re trying to cheer up someone who’s a little down and deserves to feel a little special, as in “Look! I made you my favorite brown bread and cinnamon toast that my mother used to make when I was little.”)
Brown Butter Cinnamon Toast
Prep time: 5 minutes, plus however long it takes to preheat your oven

Ingredients
- 8 pieces brown bread
- 2 tablespoons soft butter
- ½ cup of sugar
- 1 tablespoon cinnamon
Directions
- Preheat oven to 425 degrees. On a baking sheet, place 8 pieces of bread face up, and spread with butter.
- Mix together sugar and cinnamon and shake lightly over the bread. Place in middle rack of oven and bake about 7 minutes, or until sugar on top starts to harden and brown. Serve immediately.
