My mind has been on simple American treats lately, maybe because Halloween is looming, and memories of anticipating the sweets of the holiday linger long after childhood is gone. Peanut butter cookies are another iconic American treat, like the brownie. They are the ubiquitous after-school, post-soccer practice, bake sale, scout meeting, church circle, Halloween party cookie, baked in a flash and brought for others to enjoy.
Today’s recipe comes from the Blunt family in Missouri. The Blunts have made a big commitment to public service in Missouri. Roy Blunt, currently a US senator from Missouri, also served in the House of Representatives for many years, where he was House Minority Whip, before moving to the Senate. His son, Matt Blunt, served as governor of Missouri, and retired after one term to make time for his young family, a rare example of real family values in politics.
These peanut butter cookies are classic – sweet, nutty and melt-in-your-mouth delicious.
Peanut Butter Cookies
Ingredients
- Serves: makes 3 ½ dozen
- Prep time: 30 minutes
- ½ cup butter
- ½ cup sugar
- ½ cup firmly packed brown sugar
- 1 egg
- 1 tablespoon water
- 1 1/4 cups flour
- ½ cup crunchy peanut butter
- ¾ teaspoon baking soda
- 1 1/2 teaspoons of baking powder
- ¼ teaspoon salt
Directions
- Mix butter, peanut butter, brown sugar, sugar, and egg. Blend in flour, soda, baking powder and salt. Cover dough and chill.
- Heat oven to 375 degrees.
- Shape dough into one-inch balls, and place 3 inches apart on ungreased cookie sheet.
- Use fork to flatten dough into a crisscross pattern on top of cookies. Bake for 10 minutes.
